My theory is a godess on the sun cooked him, but he escaped before she could eat him, so he went on to create us so we can fight the godess off. He told us about it in the tenth I'd Really Rather You Didn't.

The flying spaghetti monster tilled the earth, sowed the seed, reaped the wheat, ground it into semolina, and rolled out his own holy pasta strands.

He suckled the young beast of burden and raised it strong and plump, slaughtered it, ground the meat, added assorted seasonings herbs and what-have-you. He formed the two holy meatballs and placed them in the holy oven at 375 for about an eon.

He created himself........ He is eternal.
