I've been vegan since the beginning of this year. I was rather surprised to see how many vegetarians are here.

My moms a complete vegetarian and at home we eat only vegetarian foods. I love it. But in restaurants I'll sometimes order fish.

I like some of those recipes you guys mentioned...they sound interesting I shall try them. Many of them I know though =)

I recently made this, and it turned out pretty good.
I chopped a big bell pepper and two plum tomatoes.
I put some olive oil, garlic powder, onion powder, crushed red pepper, oregano, basil, and Italian seasoning into a frying pan, tossed in the pepper and tomatoes. I let this cook until the peppers were tender, and the tomatoes had basically turned into a sauce. I threw in a generous helping of Romano cheese, and put it over some gemelli. This was really tasty, and if you omit the Romano, it is vegan (although you might want to add some salt.)
When I did this, I left the peels on the tomatoes, but I think it would be better if you take them off.

*holding up hand* yip... me too. vege not vegan, (cheese again, how typical *sigh*)...

What can I contribute to this thread? Hmmmmm... some of the more esoteric things I have experimented with... (I don't have recipes, I just make it up as I go along )
1. adding gated carrot makes your pasta sauce sweeter. (Thyme and carrot can get really nice... olives or mushrooms can go great with this )
2. Marmite can give a (for want of a better word) 'meatier' taste to your sauce.
3. Grill or fry peppers at high heat in good olive oil for the most amazing oil to start your cooking with. Once you have the oil, go for your recipe as normal.
4. Another great starting oil... chop up a juicy tomato and onion, add marjoram, thyme, origano, and lots of olive oil. Leave to soak, the longer the better.
