getting off meat was very difficult for me
I was born in Cali but raised very much in the Southern USA and we pust meat in all vegetables and every member of my family saves and cooks with bacon grease- but it can be done

I've been vegan for a little more than two years, vegetarian six months before that.

http://vegweb.com/ has a lot of good recipes. I believe all of them are vegan, if not things can easily be substituted. They have rating a comments that can help you decide what to make. It's organized pretty well.

Also, Vegan Planet by Robin Robertson is an excellent book. It has ton of recipes along with facts about veganism and vegetarianism.

I'm so glad lil sis is eating healthier...

I mean- after all.. the child can put away a whole pizza and a two liter of soda by herself..

hey- you should definetly post the recipie for that 3-4??? bean salad that you make.. I really really like it!!!!!

And I have been trying to cut out some meat in my diet-- but hey, I do happean to work at sonic.. but let's just say- your stash of Boca Burgers at my house is gone.. I really need to buy some more

Bean Salad(even though hominy is not a bean)
very easy
increase as needed to feed a bunch

1 can dark red kidney beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
1 can hominy, drained and rinsed
favorite bottled Russian dressing
1/4 of a red onion, very small diced-almost minced
salt and black pepper to taste
a few stems of cilantro, chopped very fine with tough parts removed and
discarded
1 medium chopped tomato, or 2 plum tomatoes, squeeze out as much
juice as you can


Mix everything together in a bowl and then add Russian dressing to taste- not soupy just coat everything.

Chill for a couple of hours.

serves abotu 6

but can be doubled or tripled or more
just watch the amount of onion- unless you like lots of onion

I've done vegetarianism and wouldn't mind going back. It is just more convenient to eat meat right now.

However, I have also done raw-foodism, I do want to go back...it's just not convenient right now.

So...raw-foodism 'ghetti.

Take your vegetables, carrots, celery, beets, cucumber, zucchini, what not. Whatever ones you like.

If you have a shredder that will make long, thick shreds, you've got raw-foodism 'ghetti. Otherwise, cafefully play with your kitchen knives until you've got it.

Blender - tomato, fresh herbs. Mix with chunks of soft veggies that you like in sauce. Pour over 'ghetti.

Yum.
