Corn Bread Salad

this is a kitchen sink dish
meaning if you like an ingredient leave it in- if not take it out- and substitution is not only allowed but blessed.

1 large pan cornbread- made the day before-put in fridge overnight-when ready to assemble break it up into rather large chunks-they will get smaller as this is mixed and stored so start pretty big.
3 diced green onions-green and white parts(the whole thing)
1 can rinsed and drained dark red kidney beans
1 cup diced cooked ham/chicken/beef (one of them or all of them)
1 cup grated cheese
1/2 head iceburg lettuce torn/cut into smallish chunks
1/2 cup whole kernel corn, drained
1 large diced tomato(I like Romas for this-less juice) drain off the juice
Ranch dressing to taste

Put everything except the dressing into a large bowl and mix it well.
Pour on some dressing and mix- it everything is coated then don't add more.
Put the lid on the bowl and put it back into the fridge for a few hours.
Serve cold.
Good for large gatherings as it can be doubled-tripled etc.

take out what you don't like
change ingredients around
